Harvest Chicken Bowl Serves 4
One. container (5 to 6 oz,) Vanilla Nonfat Yogurt with NO Artificial Sweeteners
2 Tbsp. chopped fresh parsley
1 Tbsp. apple cider vinegar
Kosher salt and ground black pepper, to taste
2 cups cooked, boneless chicken breast, shredded
1 Honey crisp apple, julienne sliced
1 bulb fennel, trimmed and slivered
2 Tbsp. chopped, toasted walnuts
4 cups mixed greens
1. In bowl, combine yogurt, parsley, vinegar, and salt and pepper to taste. Stir in chicken, apple and fennel mix to coat.
2. For each serving, place 1 cup mixed green in a bowl and top with 1 cup chicken salad. Garnish the top of each serving with 2 tsp. walnuts.
