The Cauliflower Craze!

Ignored for so long, cauliflower is
now being called the New Kale (Forbes).

Cauliflower is like kale in that it is a nutritional food.  It is high in vitamin C, calcium potassium, choline, antioxidants and fiber.

A whole cup of cauliflower contains only 27 calories, almost no fat, and only 5 grams of carbohydrates.

 
Although I like cauliflower and love it as a snack, most people do not find it to be all that appetizing. 

So how is it that there is a 'cauliflower craze'?

Fortunately, this healthy food can be prepared in many different ways and in many different recipes.

For example, cauliflower is an excellent substitute for mashed potatoes. The secret to making mashed cauliflower is to get all the moisture out of the cauliflower.  That does not mean using a towel to dry it.  You need to press the moisture out with a sieve or cloth.  Boil your cauliflower until it is tender and the press out the moisture. 

When you puree your cauliflower after drying it, add some cream cheese, about 4 tbsp per head of cauliflower.  Add butter, salt and pepper to your liking.

You can enjoy a delicious low carb mashed potato substitute and you can experiment with your mashed cauliflower as a replacement for potato in potato recipes.
